Potato Cakes


This is what I do with leftover potatoes. I make them into potato cakes!!! My husband and son love them this way and always look forward to leftovers. It is so simple. All you need to do is scoop out a pretty good portion of mashed potato and flatten into the palm of your hand. Fry in one tablespoon of butter over medium high heat for several minutes on each side. Presto - a potato cake!

My husband recently brought home an ice cream maker....(I don't know if this is a good thing or bad thing since it would be nice to shed a few pounds before summer.) We recently made homemade ice cream for the first time and it is so much better than any store bought that I've ever had. Oh is it good! That's why I don't know if this really is such a good idea!

I make potato cakes about the same way. It's a wonderful excuse for making too many potatoes so you can have some left.

Potato cakes, yummm. I've had two ice cream makers, and got rid of them both. Would love to have another one because the new ones are so, so easy to use. But now I'm lactose intolerant, so no way. But I do so love ice cream. Every now and then, I have a little. You can experiment now that you have your own machine.

That's what my aunt would do with leftover mashed potatoes too, though I think she might have stirred an egg into the mashed potatoes first. I think I loved them more than the mashed potatoes when I was a girl!

Sounds like the homemade ice cream machine is going to be totally dangerous for you. I love doing this with my leftover mashed potatoes, by the way. The crisp crust that the potato cakes get is just dynamite!
