Melt in Your Mouth Blueberry Cake


I have not been doing much cooking and baking lately since the weather has just been so warm. Right now the cookies and snacks are coming from the store and rotisserie chicken has been very popular here! Along with BLT's and anything else that does not require cooking time. I'm sure as soon as the fall comes and vacation time is over it will be full steam ahead with cooking and especially baking again. I made this cake earlier in the week and it didn't last long at all. It was very, very good and I would highly recommend it. What set this apart from other fruit cakes I've made is that you incorporated stiffly beaten egg whites at the end and it really gives it a wonderful texture. That made the cake for me. I found it over at Allrecipes. Just click on the link and the recipe will come up. I'll be making this one again and I'd love to try it with raspberries. I think it would be great with cherries too.

My granddaughter will be one in another week and I'll be going down to Richmond next week with my youngest son for a week's vacation. I'm looking very forward to it. Hope the weather stays nice like it is right now. I'm also planning on having some painting done in the rooms of my house down there. I was thinking of doing it myself but vacation is vacation and I certainly don't think painting bedrooms and bathrooms would qualify as vacation time! I'll just "let the professionals" handle it! The cake looks so good, I'll have two slices please!!! I understand the heat making it so you don't want to cook...it reached 114 here today!! OUCH! Think our local pizza place is calling us tonight! lol
