Lemon Glazed Poppyseed Cake


Well I'm back from Long Island and I had a blast! Whenever I go back and visit it just reminds me of how much I miss Long Island. Everything is really at your fingertips. The mountains are less than an hour away, the beach is less than a half hour away and Manhattan is practically right around the corner. It's just so expensive to live there. The real estate taxes alone could be a mortgage payment. Went to the beach last Friday and we went fishing on Saturday. I am a person that could fish all day. I prefer to "catch and release" but I caught a 21 inch fluke which we ended up cooking. We probably caught a good 30 fish but they were not keepers. They were all too small which was fine with me. I felt bad enough keeping one! We went to a 4th of July barbeque where the homeowners had a salt water swimming pool. It was soooo nice. I'd never even heard of a salt water swimming pool. Way better than your basic pool with chlorine.

I made this cake a while back and have been meaning to post this but just never got around to it. So here is finally is! Just click here to bring up the recipe. I really enjoyed this and added strawberries to it. I think adding the fruit really brought out all the flavors and I would like to make this again using blueberries or even mixed fruit. I haven't been cooking much lately since it is still just so warm. We've had days here over 100. So between being on vacation and the heat, my kitchen has been kind of empty lately! Your vacations sounds wonderful. I've never been to Long Island but I bet it's beautiful.

Salt water pool? Count me in. I've heard of them but have never been in one. Sounds awesome.

Welcome back Debbie! Sounds like you all had a great weekend/vacation! I use to love to go fishing with my dad...what great memories I have of that :)
I love lemon glazed cakes..there is just something so refreshing about them! Yours looks fantastic...the fruit was a nice touch!
