Coleen's Meatball Subs


I found this recipe a while ago at on Coleen's food blog. She has the greatest dishes and none of them are that difficult to make. I just realized that she hadn't posted and that she was taking the summer off. I'll miss you Coleen so please don't stay away too long! This was really simple to make and absolutely delicious. We ended up having enough for leftovers and had this two nights with no complaints. I think I could eat meatballs at least once a week. This is definitely kid friendly too.

We have had some major heat this week and I am loving it! Whenever I think it's getting just a "little too hot" I think back to February and being stuck at home with 20 inches of snow outside the door! NO thank you! I'd much rather have this. I'm going down to Richmond this weekend with my youngest son to see my older boys and grandaughter. She is almost a year old. I can't believe it. My daughter in law is planning her 1 year birthday party next month and I'm looking so forward to it.

I also saw a great movie this week - "It's Complicated." The movie came out a while back and we have it on dvd! I love it! I laughed so much. So if you are looking for a good comedy, this one is it. I usually watch horror movies (love them), but every once in a while I will watch something else!!! Hope everyone has a great weekend!!!!

I saw and loved that movie, especially because Meryl Streep plays a baker!

I love meatballs too!! I'm glad you liked the recipe. This is also good over pasta or a million other things...very versatile....I've even made them small & put them on pizza.

Those look so good, especially on a crusty bun and lots of gooey melted cheese- oh man!

Love Coleen and miss her too.

That was such a funny movie. We laughed through the whole thing. I also am a fan of scary movies but no one will watch them with me and I'm too chicken to watch them by myself. ha ha! Do you have any recommendations for some good ones? :-)

Meatballs are such a great versatile thing in Italian cooking. mmmmmm..this sandwich looks so good..it's only 6am and I want one!!!

Will have to look for that movie. We're usually into the British detective movies or crime movies in general, but a good comedy is appreciated here as well.

That Coleen, isn't she something special! Love that woman, love her cookin!

Meatball sub is my choice at the sub shop. Would pay big dollars to have something as good as yours!

Really? Horror movies. Debbie, I am such a scaredy cat that I cant even imagine it. I saw Jaws and I saw Halloween and I realized that I just don't bode well.

I have been meaning to watch its complicated so I will have to watch it.
