Cherry Bars


I recently bought a Taste of Home New Potluck Cookbook. This recipe was in there and it is so good! These taste like little mini cherry cakes and are very simple to make. Enjoy them while you can because they will not last long!

I was in Wegman's grocery store last night. I love going into their bakery section because they just have the most beautiful cakes (for a grocery store). No other store aroound this area can even compare to them. But the prices! Wow....I told my husband I will never again complain about how much I spend on ingredients to make a cake. I know I had commented last week about the price of good chocolate for a frosting I was making. No more complaining here. The prices were sky high on the cakes. I'm not saying they are not worth it...their cakes are fantastic and I am a huge fan of Wegman's, bus it is just so much cheaper to bake a cake yourself.

1 cup butter, softened
2 cups sugar
4 eggs
1 teaspoon vanilla extract
1/4 teaspoon almond extract
3 cups all purpose flour
1 teaspoon salt
2 cans (21 ounces each) cherry pie filling

GLAZE:

1 cup confectioners sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 to 3 tablespoons milk

In a large mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in the extracts. Combine flour and salt; add to the creamed mixture and mix until combined.

Spread 3 cups batter into a greased 15x10x1 inch baking pan. Spread with pie filling. Drop the remaining batter by teaspoonfuls over filling. Bake at 350 F for 30-35 minutes or until a toothpick comes out clean. Cool on wire rack. Combine glaze ingredients; drizzle over bars.

Oh cherries!! I love cherries :) I agree with you about the cake ingredients. Even mediocre cakes at the grocery store are out of site!

Debbie, your cake looks so good. And boy do I love cherries. I don't have a lot of recipes calling for them, so this is a VERY welcomed addition. I cannot wait to try this.

I hear you about the bakery cakes. In my little city all we have is the Wal-Mart bakery. The ladies there do a pretty good job on decorating, but the cakes come to the store, frozen, premade somewhere in Arkansas, if I remember correctly.

I agree with you: Homemade is soooo much better, for freshness, quality, and value.

These look wonderful! I'm sure they taste as good as they look. Re bakery cakes: They look beautiful but they have a tendency to taste the same. That can be very disappointing.

My husband loves desserts like these but I never seem to get them to turn out. This one sounds pretty easy though so I may have to give it a try. It looks gorgeous!

Thanks for stopping by my blog. You have a great site here and this recipe in particular looks so fun and different (and yummy). I live in VA as well (in Fairfax)and I too am a huge fan of Wegmans. The closest one to us is about 10 minutes away, but I make special trips just to go there. :)
