Apple Pecan Cream Pie



When I saw this recipe over at Katherine's Smoky Mountain Cafe it was just screaming out for me to make it. My "to try" recipe folder is already bulging but I just could not wait to make this one. It was perfect to make with the weather we are having here lately. Very warm and it's great to have a good pie without having to turn on the oven. I would highly recommend this recipe to everyone. It it fantastic! This is a recipe you can also vary. In fact, I already bought a can of peach pie filling to try next. And I'm thinking also of turning this into a chocolate pie too! Just a great summer dessert. Katherine also has on her site some great step by step pictures of making this pie. Yours truly over here STILL cannot figure out how to post pictures in between paragraphs. I keep saying someday I will figure this out!!! Thanks for a great recipe Katherine!

1 graham cracker pie shell

1 21 oz can of applie pie filling
2 tbs brown sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 cup chopped pecans

Mix all the above ingredients together in large bowl. Add half of mixture to pie shell and refrigerate the other half.

1 cup half & half
4 oz room temperature cream cheese
1 small box of instant vanilla pudding
1 1/2 cups whipped cream (I used Cool Whip)

In another bowl mix half & half and cream cheese together and whisk until well blended. Add vanilla pudding and whisk again till blended. Fold in whipped cream (or Cool Whip). Pour mixture into pie shell on top of apple mixture. Cover and freeze at least 2 hours. Top with apple mixture, thaw and serve. Refrigerate any leftovers.

Graham cracker crusts are my favorite. Looks yum! For posting between paragraphs, I just cut the picture from the location and then paste it where I want it.

Ooooh, looks so good! I love pie, more than cake!

For writing in between pictures, I've done what Mary does (cutting and pasting the code) or, now I am putting the pictures in the order I want them to be in (the last picture will be on the top, so put them in in reverse order of how you want them to appear). Save. Go to "compose" and your pictures should be there. Place the cursor directly to the left corner, beneath the picture, you can hit the "enter" key to make a space, and you should be all set to go.

Does any of this make sense?

Oh this looks delicious. I read back in your blog and love all the soda cakes. So much fun:) If I wasn't dieting this month I would make this immediately and probably sit down and eat most of it myself. Don't we all have to test our own creations?

Try using Windows Live Writer. Google it and it will lead you to where you can download it for free. Very easy. Even I can do it and I'm NOT computer savvy! Good luck though seriously you won't need it. :)

Pie looks gorgeous and delicious. So refreshing on a hot day. Here's how to do the photos in between paragraphs: First, download all your photos. Start typing your paragraphs. If you want to switch any photos around -- put the bottom one up top, or move one down below a paragraph, just put your cursor on the corner of the photo, click and drag. A little practice will make perfect. If you delete a photo by mistake, just download it again. After a few tries, it will be easy.
I am so glad you liked this pie, I went ga-ga over it when my sister-in-law made it! I'll have to send her over her to check out your blog!
