Zesty Slow Cooker Chicken Barbecue


I feel like I haven't blogged in ages! Don't think I have ever gone this long without a post but it's the summer and sometimes life just gets in the way! I'm having a great summer and have not been home much at all. Right now I am down in Richmond again and this time brought my laptop with me so I could post a recipe. I found this the other day on Allrecipes. My husband made this the the other night and it was great. I'm not a big fan of BBQ but I'll eat this anytime! I wanted to give this a try since it's cooked in a slow cooker which is so nice to use in the summer and doesn't heat up the entire house. We had this on hamburger buns with potato salad and corn on the cob. So simple to make too. Just a great recipe for this time of year. We also hade my granddaughers 1st birthday party last week and I'll be posting some pics of that soon.

6 frozen skinless, boneless chicken breast halves

1 (12 ounce) bottle barbeque sauce

1/2 cup Italian salad dressing

1/4 cup brown sugar

2 tablespoons Worcestershire sauce

Place chicken in slow cooker. In a bowl, mix the barbeque sauce, Italian salad dressing, brown sugar and Worcestershire sauce. Pour over chicken.

Cover, cook 3 or 4 hours on high or 5 to 6 hours on low.
NOTE: The key to keeping this moist is to keep some of the sauce on the side to pour over the chicken after you have cooked and shredded it. This makes is very flavorful and moist. Don't skip this step!

Melt in Your Mouth Blueberry Cake


I have not been doing much cooking and baking lately since the weather has just been so warm. Right now the cookies and snacks are coming from the store and rotisserie chicken has been very popular here! Along with BLT's and anything else that does not require cooking time. I'm sure as soon as the fall comes and vacation time is over it will be full steam ahead with cooking and especially baking again. I made this cake earlier in the week and it didn't last long at all. It was very, very good and I would highly recommend it. What set this apart from other fruit cakes I've made is that you incorporated stiffly beaten egg whites at the end and it really gives it a wonderful texture. That made the cake for me. I found it over at Allrecipes. Just click on the link and the recipe will come up. I'll be making this one again and I'd love to try it with raspberries. I think it would be great with cherries too.

My granddaughter will be one in another week and I'll be going down to Richmond next week with my youngest son for a week's vacation. I'm looking very forward to it. Hope the weather stays nice like it is right now. I'm also planning on having some painting done in the rooms of my house down there. I was thinking of doing it myself but vacation is vacation and I certainly don't think painting bedrooms and bathrooms would qualify as vacation time! I'll just "let the professionals" handle it! Lemon Glazed Poppyseed Cake


Well I'm back from Long Island and I had a blast! Whenever I go back and visit it just reminds me of how much I miss Long Island. Everything is really at your fingertips. The mountains are less than an hour away, the beach is less than a half hour away and Manhattan is practically right around the corner. It's just so expensive to live there. The real estate taxes alone could be a mortgage payment. Went to the beach last Friday and we went fishing on Saturday. I am a person that could fish all day. I prefer to "catch and release" but I caught a 21 inch fluke which we ended up cooking. We probably caught a good 30 fish but they were not keepers. They were all too small which was fine with me. I felt bad enough keeping one! We went to a 4th of July barbeque where the homeowners had a salt water swimming pool. It was soooo nice. I'd never even heard of a salt water swimming pool. Way better than your basic pool with chlorine.

I made this cake a while back and have been meaning to post this but just never got around to it. So here is finally is! Just click here to bring up the recipe. I really enjoyed this and added strawberries to it. I think adding the fruit really brought out all the flavors and I would like to make this again using blueberries or even mixed fruit. I haven't been cooking much lately since it is still just so warm. We've had days here over 100. So between being on vacation and the heat, my kitchen has been kind of empty lately! Happy 4th of July

I am leaving for the beach today and I'll be away until next week. Just wanted to wish everyone a happy 4th of July and great weekend. Hopefully when I get back I can start blogging a bit more than I have been the past few weeks. It's been so hot here lately that not much cooking or baking has been going on in my kitchen. I hope to start baking and cooking more when I get back....
